Ingredients

  • 1 cup flour
  • 1 heaping teaspoon baking powder
  • 1 'salt spoon' salt
  • 1 tablespoon butter or shortening
  • 1/8 cup sugar
  • 1 large egg, seperated
  • 1/2 cup milk
  • Directions

    Preheat oven to 350 degrees. Mix flour, baking powder and salt and sift. Cream butter and sugar by hand or with an electric beater. Beat the egg yolk; add milk. Add to butter and sugar mixture and beat well. Stir in dry ingredients very briefly. Fold in egg white, beaten stiff. Fill greased muffin tins two-thirds full and bake for 15 to 20 minutes.

    Yield: 12 muffins
