Ingredients

  • 1/2 cup flour
  • 1/2 cup milk
  • 2 large eggs, beaten lightly
  • Pinch nutmeg
  • 1/4 cup butter
  • 2 tablespoons powdered sugar
  • Juice of 1 lemon
  • Directions

    Preheat oven to 425 degrees. Mix flour, milk, eggs and nutmeg together in mixing bowl. Melt butter in shallow 9-inch pyrex baking dish. When butter is very hot and sizzling, pour batter into buttered dish and put immediately in oven. Bake for 15 to 20 minutes until lightly browned and very puffy. Sprinkle with sugar and lemon juice. Serve with your favorite jam. If double recipe is required, make 2 pancakes in separate baking dishes. Do not combine in one as it will not rise properly.
