Enjoy this modern casserole. 


  • 12 slices lean bacon
  • 12 eggs
  • 5 tablespoons milk
  • 1 cup shredded Cheddar cheese
  • 2 tablespoons chopped parsley
  • 1 (8 ounce) carton commercial sour cream
  • 2 teaspoons salt
  • 2 teaspoons pepper


Fry bacon in a large skillet, drain and set aside. Add milk to well-beaten eggs and cook in the same skillet until firm but still moist. Add 1 cup Cheddar cheese; stir until partially melted. Add sour cream, parsley, salt, and pepper. Fold gently until well mixed. Pour mixture into a flat pyrex or foil pan. 9x13 inches. Crumble bacon evenly over top. Bake at 325 degrees for 35 minutes or until hot. Freezes nicely.
