• 8 inch pie shell
  • Filing
  • 1 cup sugar
  • 4 tablespoons butter
  • 4 eggs, seperated
  • Grated rind and juice 1 large or 2 small lemons
  • Directions

    Cream sugar with butter until light. Beat in the egg yolks, 1 at a time. Add grated lemon rind and juice; beat in. Beat egg whites stiff; fold in lightly. Pour the filling into the pie shell and bake at 350 degrees until set and light golden brown, about 25 to 30 minutes.

    Serves 6 to 8
