• 1 pound white crabmeat
  • 4 tablespoons butter
  • 4 tablespoons flour
  • 1/2 pint whipping cream
  • Salt and pepper to taste
  • 4 tablespoons Madeira
  • 3/4 cup sharp cheese, shredded
  • Directions

    Pick over crabmeat to remove shell. Heat the butter and whisk in the flour. Cook slowly for 2 to 3 minutes without browning. Whisk in the cream and continue whisking until smooth. Add salt, pepper and Madeira. Remove from fire and add crabmeat. Pour mixture into buttered casserole or individual baking dishes. Sprinkle with shredded cheese and cook in hot oven (400 degrees) just until cheese melts. Do not overcook.

    Serves 4 generously
