Enjoy this modern Charleston Meeting Street Crab recipe. 


  • 1 pound white crabmeat
  • 4 tablespoons butter
  • 4 tablespoons flour
  • 1/2 pint whipping cream
  • Salt and pepper to taste
  • 4 tablespoons Madeira
  • 3/4 cup sharp cheese, shredded


Pick over crabmeat to remove shell. Heat the butter and whisk in the flour. Cook slowly for 2 to 3 minutes without browning. Whisk in the cream and continue whisking until smooth. Add salt, pepper, and Madeira. Remove from heat and add crabmeat. Pour mixture into buttered casserole or individual baking dishes. Sprinkle with shredded cheese and cook in a hot oven (400 degrees) just until cheese melts. Do not overcook.
