Enjoy this modern Carrot Zucchini Soup recipe.


  • 4 tablespoons margarine
  • 2 medium onions, chopped
  • 2 cups grated carrots
  • 2 small zucchini, grated
  • 4 tablespoons flour
  • 5 cups chicken broth
  • Salt
  • Pepper
  • 3/4 cup milk


In a soup pot melt margarine and sautê onions and carrots together. Cook for 5 to 7 minutes, stirring frequently. Then add the zucchini which has been pressed to remove excess water. Cook and stir another 5 minutes. Sprinkle the flour on top of the mixture and mix well. Add the broth, salt, and pepper. Simmer for 30 minutes and just before serving add the milk. Serve hot or cold.
