• 4 very large yellow onions, peeled and halved crosswise
  • 1 cup chicken broth
  • 1 tablespoon butter
  • 2 teaspoon honey
  • 1 teaspoon grated lemon rind
  • 1/4 teaspoon sweet paprika
  • 1/4 cup finely chopped pecans
  • Directions

    Arrange ornons cut side up in a large greased baking dish in 1 layer. In a saucepan combine chicken broth, butter, honey, lemon rind and sweet paprika and bring mixture to a simmer. Pour mixture over onion and bake the onions, covered, in a preheated 350 degree oven for approx imately 1 hour until they are tender to a fork. Remove cover and sprinkle the onions with chopped pecans and brown them lightly under the broiler.

    Serves 8
