Enjoy this modern recipe for an Apricot Souffle.


  • 6 egg white
  • 1 pinch salt
  • 1 tablespoon baking powder
  • 1 cup dried cooked apricots that have been run through a sieve or pureed in a food processor
  • 1 cup sugar
  • 1/2 pint whipped cream


Add salt to egg whites and beat until very dry. Add baking powder and then add sugar slowly, beating constantly. Add slowly, by the spoonful, the sieved apricots. Put in greased baking dish, set in a pan of hot water, and bake in a slow (350 degree) oven for about 40 minutes. Serve at once or souffle will fail. If desired, serve with whipped cream, very lightly sweetened.
