• 2 tablespoon gelatin
  • 1/2 cup cold water
  • 1 2/3 cups boiling water
  • 1 cup sugar
  • 1 cup cream sherry
  • 2/3 cup orange juice, strained
  • 3 tablespoons lemon juice, strained
  • Directions

    Soak gelatin in cold water. Add the boiling water to dissolve gelatin mixture. Add sugar cream sherry, orange and lemon juices. Pour into ring mold and chill until firm. Turn out on platter. Fill center with whipped cream and garnish with chocolate leaves (page 204), if you wish, or serve with pitcher of cream. Remember, the better the grade of sherry used, the tastier the jelly.
