Ingredients

  • 2 package yeast
  • 1/2 cup warm water (115 degrees)
  • 2 cups warm buttermilk
  • 1/1 cup melted butter
  • 2 tablespoons honey
  • 2 teaspoons salt
  • 1 cup whole wheat flour
  • 7 to 8 cups unbleached white flour

Directions

Preheat oven to 375 degrees. Sprinkle yeast over water and stir until dissolved. Combine yeast mixture with the buttermilk, butter, honey, and salt. Stir in the whole wheat flour. Gradually stir in enough flour until you have a soft resilient dough. You can do this by hand or with a mixer that has a dough hook. Knead for 10 minutes. Place dough in a warm ceramic bowl that has been buttered, turning the dough to coat with butter. Cover with plastic wrap and a towel. Allow to rise until doubled, about 1 hour. Punch down and allow to rise a second time. Remove from bowl, knead for 1 minute and let rest, covered with a towel, for 10 minutes. Divide into 3 portions, shape into loaves and place in 8 1/2 x4 1/2 x2 1/2-inch loaf pans. Cover with a towel and allow to rise until dough is about 1 inch above pans, 45 minutes. Bake 30 to 40 minutes remove from pans onto a wire rack and brush with butter.
