Enjoy this modern adaptation of a Beef Collops recipe. 

Ingredients

  • 2 lbs. beef (London Broil or sirloin) sliced about 1/4" thick
  • Nutmeg
  • ½ medium onion, shredded
  • 1 tsp. lemon peel, grated fine
  • Sweet herbs (parsley, marjoram, thyme, and tarragon), tied together for easy removal
  • Salt and pepper to taste
  • 1 Tbs. butter, formed into a ball
  • Flour
  • Directions

    1. Cut the beef into strips about 2" x 1/2" and use the spine of a knife and beat the beef strips.

    2. Season lightly with nutmeg and dust with flour.

    3. Place in a spider skillet, add water till almost covered.

    4. Roll the butter in flour, and add with the rest of the ingredients to the pan.

    5. Over a quickfire, bring to a simmer, shaking often. Reduce heat and hold at a simmer for about ten minutes.
