Ingredients

  • 6 large baking potatoes
  • Pepper
  • Olive oil
  • Garlic powder (optional)
  • Butter
  • Parmesan cheese (optional)
  • Salt

Directions

Preheat oven to 425 degrees. Scrub potatoes and then grease them lightly with olive oil. Pierce each with a fork. Bake for 1 hour. Cool. Cut potatoes in half and scoop out the inside, leaving ¼-inch to 1/8-inch shell. Reserve for another meal. Reduce oven temperature to 325 degrees. Place potato skins in oven-proof dish or baking pan. Bake skins for an additional 10 to 20 minutes. Spread butter on the inside of skins and sprinkle with salt, pepper, garlic powder, and parmesan cheese. Bake 10 to 15 minutes more until crisp. Serve hot.
