Enjoy this modern Baked Fish Florentine recipe. 

Ingredients

  • 4 fish filets (any fine-grained white fish such as flounder, fluke or lemon sole)
  • 1 package frozen spinach, thawed
  • 1/4 pound fresh mushrooms
  • 1 cup mayonnaise
  • 1 cup plain yogurt
  • 2 to 3 tablespoons lemon juice
  • Salt and pepper to taste
  • 1 oz butter

Directions

Cut mushrooms that have been trimmed and briefly rinsed into ½-inch pieces and saute quickly in butter until they give up their liquid. Squeeze liquid completely from spinach. Mix mayonnaise, yogurt, lemon juice, salt, and pepper. Mix together about one-fourth of the mayonnaise mixture with the spinach and mushrooms. Roll each filet around several tablespoonfuls of the spinach mixture. Place fillets in a shallow baking dish with any extra spinach mixture and cover with the rest of the mayonnaise mixture. Bake at 350 degrees for 20 to 30 minutes until fish flakes.

Alternative: Use 1 big piece of fish for 4 people. Place it on a bed of the spinach mixture in a baking dish, cover with the sauce and bake the same time as the filets. It is possible to prepare spinach, mushrooms, and sauce early in the day and assemble shortly before cooking.
