• 1/2 cups sifted flour
  • 1¼ teaspoons baking powder
  • 3/4 teaspoon salt
  • ½ teaspoon Cinnamon
  • 1/4 cup sugar
  • 1 large egg, well beaten
  • 1 cup milk
  • 1/4 cup melted butter or margarine
  • 1 cup finely chopped apples
  • Directions

    Mix and sift flour, baking powder, salt, cinnamon and sugar. Combine egg, milk, butter and apples. Add gradually to the flour mixture until moistened. Do not over mix. Bake on hot greased griddle. Serve with country sausage and maple syrup.

    Yield: 14 to 16 pancakes
