• 8 Tablespoon Butter
  • 1 medium onion, sliced
  • 1 clove garlic, minced
  • 3 pounds zucchini, trimmed, wahed and sliced
  • 2 1/2 cups rich chicken broth
  • 1 1/2 cups heavy cream
  • 1/2 tablespoon curry powder
  • Salt and pepper
  • Sour cream
  • Directions

    In a saucepan over medium heat, heat butter. Sautk onion, garlic and squash until soft and golden. Purêe the mixture in a processor or by hand. Return to pan and add broth, cream, curry and salt and pepper. Cook on low heat 15 minutes to blend flavors. Serve hot or cold. Garnish with a spoonful of sour cream.
