• 6 medium-sized ripe tomatoes
  • 2 tablespoons mayonnaise
  • 2 to 4 teaspoons curry powder
  • 2 tablespoons capers
  • 3 tablespoons fine bread crumbs
  • Dash cayenne pepper (optional)
  • Topping
  • Coarse bread crumbs
  • Finely grated Romano cheese (or pecorino cheese)
  • Unsalted butter
  • Directions

    Cut off top quarter of tomatoes. Scoop out the seeds and center pulp. Mix mayonnaise curry powder, capers, fine bread crumbs and cayenne pepper. Stuff each tomato with mayonnaise mixture. Top each tomato with coarse bread crumbs; layer on finely grated Romano (or pecorino) cheese and top this with slab of unsalted butter. Place tomatoes in oven- proof baking dish and store in cool place until ready to serve, Place under broiler for 5 minutes or until tops are nicely browned and tomatoes are warm throughout.
