• 4 medium green peppers, halved and seeded
  • 1/2 pound ground beef
  • 1 egg
  • 2 cups cooked brown rice
  • 1 teaspoon prepared horseradish
  • 1 teaspoon tamari
  • 1 cup shredded Swiss or Cheddar cheese
  • 1 cup tomato sauce (8 ounce can)
  • 3 tablespoons sunflower seeds
  • Directions

    Steam the peppers for 5 minutes. Arrange them, cut side up, in a shallow baking dish. Sauté ground beef in a skillet until cooked through. In a large bowl beat the egg slightly and add the rice, ground beef, horseradish, tamari and half of the cheese. Mix together lightly and pile into pepper shells. Bake at 350 degrees for 15 minutes. Remove from oven, pour tomato sauce over the tops, sprinkle with remaining ¼ cup cheese and the sunflower seeds and return to the oven for 15 minutes more.
