• 6 large artichokes
  • 6 hard-boiled eggs
  • 6 tablespoons mayonnaise
  • Salt to taste
  • Pepper to taste
  • TABASCO brand pepper sauce to taste
  • 6 tablespoons minced celery
  • 6 tablespoons chopped olives
  • 6 tablespoons crabmeat or shrimp, chopped
  • Directions

    Soak artichokes in cold salted water for 30 minutes. Rinse. Boil in salted water 45 minutes or until tender. To test, pull leaf from middle of artichoke and taste. Remove from water and drain. Chill. Mash eggs and mix with mayonnaise, salt, pepper, Tabasco, celery, olives and crabmeat or shrimp. Remove choke from artichoke as follow: Stand artichoke in small bowl. Open leaves and pull out center leaf carefully, using small sharp spoon. Add edible part from center to egg mixture. Fill artichoke with mixture and serve on lettuce topped with mayonnaise.
