• 4 dozen shrimp, cleaned and cooked
  • 1 pound pasta shells
  • 2 cups cooked fresh peas
  • 2 cups mayonnaise
  • 2/3 cups scallions, finely chopped
  • 3 tablespoons tarragon wine vinegar
  • 2/3 cup herbs, finely chopped (fresh dill, basil, rosemary, etc.)
  • 2 tablespoons capers
  • Heavy sprinkling of freshly ground pepper
  • Salt, if desired
  • Garnish: Chopped parsley or hard-boiled egg or both
  • Directions

    Cut the cooked shrimp in half. Cook the pasta al den te in 6 quarts of boiling salted water for about 13 minutes or until just tender. Cool. If you use frozen peas, just pour boiling water over them in a sieve. Drain well.
