• 2 tablespoons finely diced onion
  • 2 tablespoons butter
  • 2 teaspoons curry powder
  • 1 tablespoon flour
  • 3 1/2 cup chicken stock
  • 4 egg yolks
  • 2 cups heavy cream
  • 1/4 cup finely diced chicken meat
  • 1 red apple, cored and diced
  • Directions

    Saute onion in butter until soft, not brown. Add curry powder. flour and cook slowly 5 minutes. Add stock and bring to a boil, stirring until smooth. Whip egg yolks until light yellow, then whip in and cook 1 minute more. Cool. Add cream and chicken. Blend 1 minute in blender. Serve very cold with apple croutons.
