• 1 pint bay or ocean scallops, cut in fourths
  • 1/2 cup melted butter
  • 1 cup cracker crumbs
  • 3/4 cup light cream
  • 1 tablespoon sherry
  • Salt and pepper to taste
  • Directions

    Preheat oven to 400 degrees. Butter a casserole dish (9x9-inch). Place in it a layer of scallops, then crumbs, then scallops, then crumbs. Salt and pepper the scallops Lightly as you put them in. No more than 2 layers. Pour in cream and sherry. Bake uncovered for 25 minutes.

    Serves 3 to 4
