• 8 ounces uncooked fettucine noodles, medium width
  • 3 to 4 tablespoons sweet butter
  • 2 eggs
  • Salt
  • Pepper
  • 3/4 to 1 cup freshly grated imported Parmesan cheese
  • 1/2 pound bacon, cooked crisp and crumbled
  • Directions

    Cook fettucine in large quantity of salted, boiling water. (If the pasta is freshly made, 3 to 4 minutes; if commercial, approximately 8 minutes. In any case until it is al dente.) Quickly drain and toss with butter in a heavy hot bowl. Pour beaten eggs in thin stream over pasta, tossing lightly. Add salt and pepper to taste and grated cheese. Fold in crumbled bacon. Serve at once with additional cheese.
