• 3 pounds parsnips
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 stick (1/2 cup) melted butter
  • 4 tablespoon heavy cream
  • Madeira to taste
  • Buttered bread crumbs
  • Directions

    Preheat oven to 350 degrees. Scrub parsnips. Boil in salted water, covered, until tender. The time depends on the age and size of the parsnips. Drain and dip in ice water to make them easier to peel. Peel and cut into pieces and put in blender with all other ingredients except bread crumbs. Spoon puree into 1-quart baking dish. Sprinkle with buttered bread crumbs and bake for 30 minutes.
