• 1 package frozen peas
  • 1 bunch watercress
  • 2 cubes concentrated chicken bouillon
  • 3/4 cup water
  • Salt and pepper to taste
  • 1/2 teaspoon lemon juice (optional)
  • Directions

    Heat water until boiling in medium size pot. Add chicken cubes and dissolve. Add frozen peas, top with watercress, cover and cook only until watercress wilts. Remove from fire. Drain, rešerving liquid. Put peal/watercress combination in a food processor and purêe until con sistency of Cream of Wheat (not consistency of baby food), adding reserved liquid as necessary. Season with salt and pepper to taste and add lemon juice, if desired. Just before serving put a dollop of butter on top.
