• 3/4 cup sugar
  • Grated rind of 1 orange
  • 1/4 cup cold water
  • 1 envelope gelatin
  • 2 tablespoons cold water
  • 2/3 cup orange juice
  • 2 tablespoons lemon juice
  • 1 1/2 cups heavy cream, whipped
  • Directions

    Put the sugar and grated orange rind and ¼ cup water in a saucepan and boil for 1 minute. Soak the gelatin in the 2 tablespoons of water and then dissolve it. In the hot syrup. Add the orange juice and lemon juice. Pour into a mold and place over a bowl of ice to chill until the mixture begins to thicken. Stir frequently. Fold in the whipped cream. Allow at least 4 hours in the refrigerator before serving.

    Serves 6
