• 2 envelops unflavored gelatin
  • 1/2 cup fresh grapefruit juice
  • 1 1/4 cups boiling water
  • 3 cups mashed avocado
  • 1/3 cup lime juice
  • 1 tablespoon sugar
  • 2 tablespoon salt
  • 1 onion, grated
  • 1/4 tablespoon TABASCO brand pepper sauce
  • 3/4 cup mayonnaise
  • Pomegranate seeds for decoration
  • Directions

    Soak the gelatin in the fresh grapefruit juice and dissolve in boiling water. Blend avocado with lime juice, sugar, salt, grated onion, Tabasco and mayonnaise. Add gelatin. Mix and chill in an 8-cup ring mold.To serve, unmold on a lettuce leaf lined serving platter. Fill the center with and chopped parsley. Sprinkle the avocado ring with pomegranate seeds.
