• 1 lemon, halved
  • Two 3 pound broilers
  • 8 tablespoons butter
  • 2 cloves garlic, minced
  • 8 large mushrooms, sliced
  • 1/2 teaspoon salt
  • 2 teaspoons marjoram
  • Pinch nutmeg
  • Brandy (optional)
  • Directions

    Split 2 broilers into quarters or into 8 pieces if you prefer. Rub them with the cut lemon. Melt 6 tablespoons of butter add the garlic. Broil the chicken on a rack in a roasting pan, basting frequently with the garlic mixture, for 12 to 15 minutes. Meanwhile, saute the mushrooms for 5 minutes in 2 tablespoons of butter with salt, marjoram and nutmeg. When chicken is golden, remove rack and put chicken down on bottom of pan. Baste again and pour the mushroom mixture over. Bake at 300 degrees for 20 minutes. Arrange on a warm platter on a bed of white rice. Garnish with wedges of red tomatoes and green parsley. If desired, ignite 2 to 3 tablespoons of heated brandy and flame chicken before serving.
