• 1 pound cooked ham, cut 1/2 inch thick
  • 3/4 pound green peas (may be frozen)
  • 1/2 pound butter
  • 2 pound green noodles (homemade if possible)
  • 2 cups heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • Salt
  • Pepper
  • Pinch nutmeg
  • Directions

    Cut the ham in thin 1-inch strips. Sauté the peas in a heavy skillet in a little butter. Add the ham and heat. Cook the noodles until just done in plenty of salted water. Drain. Have a large casserole ready with the rest of the butter and the cream heated on low heat. Put in the noodles; stir. Add the peas, ham and ½ of the Parmesan. Mix well. Serve with more cheese on the side.

    Serves 8 to 10
