• 1/2 pound salt pork, diced
  • 3 medium onions, sliced
  • 5 medium potatoes, cubed
  • 2 pounds filet of haddock skinned
  • 1 quart milk (approxinately)
  • 1 small can evaporated milk
  • Butter
  • Directions

    Fry salt pork until crisp. Leave 4 or 5 pieces of pork and 1 tablespoon of fat in pot. Dispose of remaining fat and drain pork on paper towels. Sim mer 3 slices of onion in fat. Add remaining onions, cover with water and boil for 5 minutes. Add potatoes and more water to cover. Simmer until nearly cooked. Lay haddock, cut in large pieces, on top of potatoe, and onions and simmer until cooked. Add enough milk to cover haddock. Add evaporated milks Heat but do not boil. Before serving, add salt and pepper to taste, sprinkle with pork bits and dot with a bit of butter. Some like to add a dash of Worcestershire or A-l sauce. This is usually served with pilot biscuits.
