• 4 tablespoons butter
  • 2 tablespoons shallots, chopped
  • 4 fileta of beef, 1 inch thick
  • 1/2 cup dry white wine
  • Salt
  • Parsley
  • Pepper
  • Directions

    Melt 3 tablespoons butter in a skillet: brown meat for 4 minutes on each side over high heat. Season with salt and pepper. Place on hot platter and keep warm. To the pan juices in skillet add shallots, wine and re maining tablespoon of buttet Mix well and cook over medium heat for 2 minutes. Spoon over filets. Garnish with chopped parsley.

    Serves 4
