• 2 envelops plain gelatin
  • 1/2 cup cold water
  • 3 large cucumbers or 4 small ones
  • 1/4 cup vinegar
  • 2 teaspoons sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon white pepper
  • 1 vegetable bouillon cube
  • 3 large avocados, mashed
  • 1 medium onion, grated
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • Green food coloring (optional)
  • Directions

    Combine gelatin and water and set aside. Peel cucumbers. Split in half and remove seeds and grate. Measure grated cucumber to make 1 cup. Add vinegar sugar, salt and pepper and bring to a boil. Remove from heat and add vegetable bouillon cube and softened gelatin. Stir until dissolved. Cool mixture slightly and add mashed avocado, onion, sour cream and mayonnaise. Add a few drops of green food coloring to tint a pale green. Taste for seasoning. Pour into a lightly oiled 2-quart ring mold and chill until set, 4 hours. Turn onto a serving platter and fill center with watercress or marinated shrimp.
