• 2 ripe avocados
  • 1/2 cup plain yoghurt
  • 3 cups chicken broth (preferably homemade)
  • 1 tablespoon lemon juice or more, to taste
  • Curry Powder(optional)
  • Salt and pepper to taste
  • 1/4 cup minced green onions, including green part
  • 2 large tomatoes, peeled, seeded and chopped coarsely
  • 2 or 3 tablespoons crisp and crumbled bacon (optional)
  • Directions

    Put peeled, cut-up avocados in blender or food processor with yoghurt, broth, lemon juice, optional curry powder, salt and pepper. Process until very smooth. Chill, tightly covered. The plastic wrap cover should touch the top of the soup to keep it from turning brown. Garnish each serving with onion, tomatoes and optional bacon, or they may be stirred in before serving. If you cannot find good, ripe fresh tomatoes, use canned tomato wedges or sliced tiny tomatoes.

    Serves 6 to 8
