    Soak a trimmed whole head of cauliflower in cold water for 10 minutes main, place in steamer and steam until done, 10 to 15 minutes. Do not overcook; cauliflower should be crisp. Refresh under cold water. Drain; pat dry with paper towels. Cover with vinaigrette dressing and chill. Garnish with rolled anchovies, black olives and dot with capers.

    Serves 6 to 8
