• 8 strips bacon
  • 2 tablespoons butter
  • 1 cup cream
  • 4 eggs
  • Salt
  • Pepper
  • Cayenne pepper
  • 4 tablespoons grated cheese
  • 4 slices bread
  • 1 small wine glass sherry
  • Directions

    Broil bacon. Melt butter in pan and when melted add the cream. Drop eggs. without breaking the yolks, into pan and sprinkle with salt, pepper and cayenne. When whites are nearly firm, sprinkle with cheese and finish cooking. Toast bread and cover with bacon. Place 1 egg on each square of toast and bacon. To remaining cream mixture, add sherry and pour over eggs.

    Serves 2 to 4
