• 1 cup finely chopped basil
  • 1 cup finely chopped parsley
  • 1 clove garlic, finely chopped
  • 3/4 cup grated Parmesan cheese
  • 1 cup olive oil
  • Directions

    The basil, parsley and garlic may be chopped in a food processor. Mix first 4 ingredients thoroughly in a deep jar. Add olive oil a little at a time stirring until the consistency is pasty. Pour a thin layer of olive oil over the top of the mixture and cover the jar tightly. This will keep several months in the refrigerator. Toss over pasta sparingly.

    Yield: 1 pint
