Ingredients

  • 1 3/4 cups corn meal
  • 1 1/4 cups flour
  • 1/4 cup sugar (optional)
  • 2 tablespoons baking powder
  • 3/4 teaspoon salt
  • 1 1/2 cups milk
  • 1/2 cup melted shortening or oil
  • 2 large eggs
  • Directions

    Preheat oven to 425 degrees. Combine corn meal, flow sugar, if desired, baking powder and salt. Add milk and shortening, then beat in eggs 1 at a time. Beat until fairly smooth. Pour into well-greased 9x13-inch baking pan. Bake for 20 to 25 minutes. Cut into 18 pieces, about 2x3 inches each (or bake in 18 muffin cups for 15 to 20 minutes). Serve hot.
