Ingredients

  • 2 tablespoons butter
  • 1 small onion, chopped
  • 1 bunch watercress, chopped
  • 4 cups chicken bouillon
  • 1 medium potato, boiled
  • Salt and pepper to taste
  • Directions

    Heat butter in large saucepan and saute onions until soft, 3 to 4 minutes. Add watercress and saute for 2 minutes. Add bouillon, bring to boil and simmer for 10 minutes. Pour mixture into blender and add boiled potato. Blend until smooth. Season to taste.

    Serves 4
