  • 3 teaspoons minced shallots or green onions with tops
  • 3/4 teaspoon dry mustard
  • 1/2 teaspoon salt
  • 3 or 4 grinds of pepper
  • 2 tablespoon wine or white vinegar
  • 2 tablespoons lemon juice
  • 1/4 cup olive oil (good quality)
  • 1/4 cup peanut or vegetable oil
  • 1 tablespoon fresh herbs (parsley, tarragon, chervil or basil)
  • Directions

    Put all ingredients in screw-top jar and shake vigorously.
