Ingredients

  • 4 pund catfish
  • 1 pound cooked crayfish or shrimp
  • Stuffing
  • 4 ounces butter or margarine
  • 1/2 cup green pepper
  • 1/2 cup green onion
  • 1/4 cup celery leaves
  • 1 cup seasoned bread stuffing
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon black pepper
  • 2 teaspoons salt
  • Directions

    Broil a 4-pound catfish for 20 minutes or bake in a 350 degree oven for 20 minutes. Cut off head and tail (save) and remove large bone in center. Saute the above ingredients in butter or margarine and when softened add 1 pound of cooked crayfish or shrimp. Stuff the fish with this mix ture and replace head and tail. Pour ¼ pound of melted butter or margarine over fish and reheat. Add fluted lemon and parsley for decoration.
