Ingredients

  • 2 cups cooked and peeled shrimp
  • 2 teaspoons lemon juice
  • 2 to 3 teaspoons minced onion
  • 2 cups diced celery
  • 1 1/2 to 2 cups sliced fresh mushrooms
  • Salt and paprika to taste
  • Dressing
  • 1 egg
  • 1 teaspoon salt
  • 1/2 teaspoon dry mustard
  • 1/4 teaspoon paprika and red pepper
  • 2 tablespoons vinegar or lemon juice
  • 1 cup salad oil
  • Directions

    Mix together above ingredients. Chill thoroughly. Just before serving toss with enough homemade mayonnaise to bind. Serve on a bed of lettuce with a side dish of extra mayonnaise. Mix all ingredients excepts oil in food processor. Add oil in slow stream. Mayonnaise is proper consistency when all the oil is in. Refrigerate until needed.
