Ingredients

  • 6 zucchini squash
  • 3 tablespoons butter
  • Salt and seasonings to taste
  • 1/2 teaspoon grated lemon rind
  • Directions

    Shred 6 unpeeled zucchini squash in food processor. Salt generously and place in colander for 15 minutes. Rinse, squeeze fluid from zucchini and sauté in 3 tablespoons of melted butter for 5 minutes. Adjust seasonings; add salt if necessary. Sprinkle with ½ teaspoon grated lemon rind and serve.

    Serves 4
