Ingredients

  • 15 tablespoon bacon drippings
  • 18 tablespoon all-purpose flour
  • 6 onions, chopped fine
  • 4 1/2 cups finely chopped celery
  • 3 cloves garlic, minced
  • 3 (1 pound, 12 ounce) cans tomatoes
  • 3 cans tomato sauce
  • 3 packages frozen cut okra
  • 15 to 18 cups of water
  • 3 tablespoons salt
  • 1 pound German sausage
  • 1/2 pound ham, diced
  • 6 pounds shrimp, shelled and deveined
  • 1 tablespoon gumbo file
  • 9 tablespoons Worcestershire sauce
  • 1 tablespoon chili powder
  • 1 pint oysters
  • Directions

    Make a roux of the bacon drippings and the flour, browning well. Add onions and celery and cook until transparent. Add minced garlic, tomatoes, tomato sauce, okra, and 15 or more cups of water along with 3 tablespoOns of salt. Cook for 2 to 3 hours on low heat. Add diced sausage and diced ham and cook for 1 hour Add shrimp and cook 10 minutes. Add gumbo filé, Worcestershire sauce, chili powder. Add oysters if you do not plan to freeze. The gumbo will be thick. Serve over rice.
