Ingredients

  • 4 cups whole wheat flour
  • 2 cups unbleached flour
  • 2/3 cup rolled oats (either quick or old-fashioned variety)
  • 1 tablespoon baking soda
  • 1 1/2 teaspoon salt
  • 3 cup buttermilk or sour milk (Note: To Sour Sweet milk, combine 1 tablespoon white vinegar with enough milk to make one cup.)
  • Directions

    Preheat oven to 375 degrees. Blend flours, oats, salt and baking soda. Add milk, stir and then knead lightly. Shape into 2 small balls. Put on oiled and floured baking sheet. Slash a cross on top of each loaf. Bake for 35 to 40 minutes until bread sounds hollow when tapped.

    Yield: Two 7-inch loaves
