Ingredients

  • 1 cup oatmeal
  • 1 cup buttermilk
  • 1 large egg
  • 4 cup light brown sugar, firmly packed
  • 1/2 cup whole wheat flour
  • 1/2 cup white flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 cup vegetable oil
  • Directions

    Preheat oven to 400 degrees. Soak oatmeal in buttermilk 1 hour. Add egg and sugar, beating well. Sift flours with salt, baking soda and baking powder. Fold in the batter with the oil. Pour into greased muffin tin and bake for 15 to 20 minutes.

    Yield: 12 muffins
