Ingredients

  • 2 1/2 cups sliced mangos
  • 3 (3 ounce) packages lemon flavored gelatin
  • Water
  • 1 (8 ounce) package cream chesse
  • Dressing
  • 1 cup mayonnaise
  • 1 cup sour cream
  • 1 cup apricot preserves
  • Directions

    Drain liquid from the mangos (reserving fruit for later); add enough water to mango liquid to make 4 cups. Then heat liquid to boiling and pour over lemon gelatin to dissolve. Refrigerate the gelatin until slightly jelled. Place mangos and the cream cheese in blender and liquify. Add mangos/cream cheese mixture to partially jelled gelatin and blend thoroughly. Pour into individual molds or an 11X7X1¾-inch pan and refrigerate for 6 hours or overnight. Dressing 1 cup mayonnaise 1 cup sour cream 1 cup apricot preserves
