Ingredients

  • 2 cups sweetened, condensed milk
  • 1 cup fresh lemon juice
  • 2 eggs yolks
  • 2 tablespoons grateed lemon rind
  • 2 cups heavy cream, whipped to form peaks
  • Directions

    Pour milk into a bowl and stir in lemon juice until well blended and thickened. Add egg yolks and beat well. Add 1 tablespoon lemon rind. Fold mixture into whipped cream and pour in parfait glasses. Top with remaining lemon rind and chill 4 hours.

    Serves 8
