Ingredients

  • 4 strips bacon, cooked and crumbled
  • 1/4 cup chopped green pepper
  • 1/2 cup chopped onion
  • 1/3 cup butter or margarine
  • 2 tablespoons flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon seasoned pepper
  • 1 teaspoon parsley flakes
  • 1/2 bay leaf
  • 1/4 teaspoon poultry seasoning
  • 4 cups milk
  • 2 (1 pound, 10 ounce) can cream-style corn
  • 1 (1 pound, 10 ounce) can whole small potatoes, cubed
  • Directions

    Drain crisp fried bacon on absorbent paper. Saute green pepper and onion in butter until tender. Blend in flour and seasonings. Gradually add milk, corn and cubed potatoes. Cook over medium heat until thick and creamy, stirring occasionnally. Just before serving, stir in crumbled bacon, saving some to sprinkle on top.

    Serves 6 to 8
