Ingredients

  • 3 pounds lean beef, cubed
  • Salt
  • Pepper
  • 1/2 cup butter
  • 2 1/2 pounds small white onions, peeled
  • 1/4 pound mushrooms, chopped
  • 1 (6 ounce) can tomato paste
  • 1/3 cup red wine
  • 2 tablespoons red wine vinegar
  • 1 tablespoon brown sugar
  • 1 clove garlic, mashed
  • 1 bay leaf
  • 1 small stick cinnamon
  • 1/2 teaspoon whole cloves
  • 1/4 teaspoon cumin
  • 2 tablespoons currants or raisins
  • Directions

    Season meat well with salt and pepper. Melt butter in heavy kettle with cover. Add meat and coat with butter but do not brown. Arrange onions and mushrooms over meat. Mix together tomato paste. wine, vinegar, brown sugar and garlic. Pour over meat. Add bay leaf, cinnamon, cloves, cumin and currants. Cover and simmer 3 hours. Do not stir until serving time. Serve with noodles sprinkled with sesame seeds.
