Ingredients

  • 6 tomatoes, peeled, seeded and chopped into small pieces
  • 2 cups tomato juice
  • 1 bunch green onions, finely minced
  • 1 tablespoon minced fresh basil or 1 1/2 teaspoon dried basil
  • 1 tablespoon finely chopped fresh tarragon or oregano or 1 1/2 teaspoons dried tarragon or oregano
  • 4 tablespoon light olive oil
  • Salt
  • Pepper
  • Directions

    Place first 6 ingredients in large bowl. Toss gently with oil. Season with freshly ground pepper and a little salt. Chill. Serve with crusty rolls.

    Serves 4 to 6
